We bought some Gamma Seal lids at Walmart today. These lids make your 5 gallon buckets air tight and good for food storage. As an added bonus, they have many different colors to choose from.

I got a couple of good Christmas gifts to help in making videos.
The first one was this microphone which I’ll use for voice-overs, recording music, and other things:

I’ve been looking forward to getting a tripod for a while now.
We found this one (that extends to 56” tall) online for pretty cheap:

I have a video editing software that can do green screen effects, so I decided to take one of our sheets, which happens to be olive green, and hang it on the wall in my new studio that doubles as a laundry room. I had to iron the sheet to remove the shadows.

When I have some time I’ll put together a dumb little green screen video and post on here. Stay tuned…

Christmas Concert

We were lucky enough to win the lottery for tickets to the Mormon Tabernacle Choir Christmas Concert featuring David Archuleta & Michael York. Over a million people put in for tickets and we received 4 of the 80,000 given out. We decided to take my parents with us.

It was very good. David Archuleta has a very nice voice and Michael York is a great storyteller.

We also did a quick walk through temple square before the concert and saw the Christmas lights. Here are some photos we snapped:

Oatmeal Chocolate Chip Cookies

We finally found a good recipe for oatmeal chocolate chip cookies (Thanks Mom):

1 C. Brown Sugar
1 C. Sugar
1 C. Butter (make sure you just soften it, not melt it. It’s best to soften it at room temperature but if you have to use the microwave BE CAREFUL. If you melt it, the cookies will come out as flat as a possum at a monster truck rally.)
4 Eggs
2 tsp. Vanilla

Mix those things together then add:

2 1/4 C. Flour
1 tsp. Baking Soda
1/2 tsp. Salt
2 1/2 C. Oats
As many dang chocolate chips as you want (1-2 cups)

Bake 8 minutes at 350 degrees. What I do is set the timer for 7 minutes then check it often until they’re done because some ovens are just plain crazy and I don’t want burnt cookies.

Our Stake Presidency has been urging everyone in the stake to get 3 months of food storage before the end of the year. We decided we’d take advantage of some of the Christmas cash that relatives have sent us and head to Michael’s favorite place in the World: WinCo.

Here’s what we bought:

Grove Creek Hike

Last Saturday I went on a little hike up Grove Creek Canyon (Pleasant Grove) with my uncle Rob and my cousin Ben. It was a pretty hike and we even saw a golden eagle fly right in front of us across to the other side of the canyon. Here are some more photos:

Flagstaff Trip

We went to Flagstaff for a couple of days to get the family together for a family photo and to visit Reuben. It was a lot of fun.
It was a long drive down (8 hours) but we had fun riding down with Spencer & Celeste & Jack the dog. We played some games and listened to some music and comedy cd's. We even listened to an hour long discourse on the proper role of government by Ezra Taft Benson while we drove from Flagstaff to Sedona. On the drive home we played Jeopardy almost the entire time. It sure made the time go by fast.

4th of July Thoughts

Today we celebrate the two hundred and thirty-third anniversary of the birth of this great nation. The last sentence in the Declaration of Independence states: “And for the support of this Declaration, with a firm reliance on the protection of Divine Providence, we mutually pledge to each other our Lives, our Fortunes, and our sacred Honor.”

The men who signed that great document honored this pledge as illustrated in the following examples:

Richard Stockton – New Jersey – During the war Stockton and many others were offered amnesty by General William Howe to those willing to renounce the American “rebellion” and renew their loyalty to the King. Although many took the offer of amnesty, Stockton did not and was marched to Perth Amboy where he was put in irons, and brutally treated as a common criminal. He was then moved to Provost Prison in New York where he was intentionally starved and subjected to freezing cold weather. After nearly six weeks of brutal treatment, Stockton was released. While in prison, Stockton’s estate was occupied by General Cornwallis; his furniture, all household belongings, crops and livestock were taken or destroyed by the British. His library, one of the finest in the colonies, was burned. He died in poverty in 1781.

George Clymer – Pennsylvania – At the Battle of Brandywine he and his family narrowly escaped from the British. They then watched as their home was sacked and burned before their eyes.

William Ellery - Rhode Island, Thomas Nelson Jr. - Virginia, and many others lost their fortunes and property because of their dedication to that sacred pledge.

I could go on and on, but the point is these great men and many others since that time gave all they had for the cause of freedom. Liberty was more important to them than money, security, and even their lives. Patrick Henry articulated this in a speech he gave to the Virginia convention when he said, “Give me liberty or give me death.”

So today as we enjoy the fireworks and backyard barbeques let us we remember the men and women of this country who have valued liberty more than life itself and may we “mutually pledge our Lives our Fortunes, and our sacred Honor” in the preservation of that liberty and may God bless the United States of America.

Recently, my dad's brother Nathan and his wife Yamina were able to adopt two kids, a boy and a girl, who are siblings. This last Sunday they had their baby blessing. These pictures are of them and other cousins who at first were riding me like a horse and later decided to attack me.

Wildlife Trail

When we went to Fillmore for Easter, we went with Celeste and Spencer to the Wildlife Park(I've never seen any actual wildlife there, but that's what it's called) and we walked on the "Wildlife" trail. When we were younger, we used to walk to this place (it's only 4 or 5 blocks from our house) or ride our bikes there and go on the trail. You wouldn't be able to ride a bike on the trail now, but back then it was a lot of fun to ride on it.

Mac & Cheese Recipe

This is the greatest Mac & Cheese in the world (courtesy of Paul Beaty):

Preparation: 25 minutes
Oven Temp: 350
Bake: 45 minutes
Stand: 10 minutes
Makes: 4 large servings

Ingredients:
8 oz dried elbow marconi (2 cups)
1/8 tsp onion powder, or ½ cup of finely chopped onion (1 medium)
1/8 tsp garlic powder
1/8 tsp black pepper
1/8 tsp salt
1 egg
2 ½ cups milk
16 oz shredded cheddar cheese
8 oz small cubes of cheddar cheese
Instructions:
1. Bring about 6 cups of water to a boils with 1/8 tsp of salt; add dried elbow Marconi and cook until el dente (soft yet firm). Stir after adding macaroni to ensure it does not stick to the pot or each other. May need to stir 2 or 3 times.

2. While water and noodles are cooking, add milk, egg, pepper, onion and garlic to the pan you will use to bake. Mix together.

3. While water and noodles are cooking, preheat the oven.

4. While water and noodles are cooking, add ¾ of the shredded cheese to the milk mixture.

5. When noodles are done, drain in colander. Do Not Cool With Water. Add straight to milk
mixture and stir with cheese. While mixing in hot noodles, add all cheese chunks.
6. Top with remaining shredded cheese.

Notes:

1. Some deeper cooking dishes need about 15 minutes more cooking time than shallower ones.
2. The top should start to become medium brown in some areas.
3. Some folks like larger chunks of cheese than others, I like chunks the size of my thumbnail.
4. Garlic and onion powders, rather and chopped keeps the texture focus on the macaroni and cheese (and hides them from people who do not like garlic and onions (e.g. children).
5. Glass, ceramic, or corning ware pans make a better casserole.

I was hired to work at a new Wal-mart being built in Cedar Hills (near American Fork). I'll be working in the electronics department on the overnight shift. It's not the most glamorous job for a college grad but we'll take it! We also found a basement apartment in Cedar Hills within walking distance of the new Wal-mart! We are super excited that we found a place that close to my work and for such a good price!

On Christmas we went on a short hike at the bottom of the canyon near Fillmore to play in the snow and see if we could find a good place for sledding.

1st Round Playoffs

Well, we came out strong in the first round of the playoffs winning 12-1 against the Ice Monkeys(who beat us twice this season). I scored 3 goals and had 1 assist. I just hope our team doesn't get cocky and lose the next game.

Hockey Playoffs to Begin Next Week

We wrapped up the regular season with a 7-3 win over the Ice Monkeys. It was a big win for us, we haven't played that well all season so it's a good way to head into the playoffs. I had a goal and an assist in the game and finished the season with 8 goals and 4 assists in 9 games. Our team finished 5-3 with a 3 game winning streak heading into the playoffs which begin next Thursday.

For Halloween Jessica dressed as a communist and I went as a hockey player, sort of. Actually, I had a hockey game on Halloween so I dressed up as a hockey player for that. We won 7-6 and I had 2 goals and spent some time in the penalty box for taking someone down, and I later found out it was a woman! I was called for hooking because I used my stick to pull her stick away from her and it made her fall down. Oops.

After the first game I was traded to Napoleon's Dynamite because they didn't have enough players. I've posted some photos of our most recent hockey game, which we lost 7-6. I'm #11. Here's how our other games have gone:

W - Dynamite 5, Ice Monkeys 3

I play forward, mostly left wing and center. I have 4 goals and 3 assists so far this season.

I thought I would add a series to this blog called "Things that Make Me Want to Vomit" since it isn't very hard to find these things in the news these days.
Today's entry is from congress (go figure) where they are talking about removing the tax benefits from 401 K's that encourage individual retirement planning. The congressmen even called the lack of taxing this money "subsidies." WARNING! This article may cause excessive vomiting. Read it here.

1. Kitchen Sink - It's actually pretty clean, the bowl is from breakfast today and that jar used to have Grandma's delicious marmalade jam in it

2. Laundry Room - Yep, that's right, we have SIX washing machines!

3. Fridge - Pretty boring stuff: last year's USU football schedule magnet, visiting teaching assignment paper, old receipts, and the not so boring stuff like my hockey schedule and a Total Care Wellness Center magnet.

I also thought I should include this cool thing made by my mom because we use that as our second fridge.

4. Bathroom - Very exciting, eh?

5. Closet - I like this feature of our apartment, we have an entire wall of closet space. Celeste said we weren't supposed to clean anything up so that's why a certain piece of protective equipment that I wear for hockey is hanging off one of the doors. Sorry.

6. Favorite Room - Hmmm, there were so many choices, but I had to go with our livitchen room, since that is where we eat food and read books. (The kitchen is the other side of this room.)

7. Favorite Shoes - This seems like such a girl thing to do, but it was pretty easy since I don't have very many shoes to choose from. I wear my black dress shoes every day, my $3 flip flops are very comfortable, and I love hockey. The combined price I paid for these shoes was $73 before tax.

8. Self-portrait - Again, Celeste said we weren't supposed to clean anything, so I didn't comb my hair.

9. Children - This is the closest thing we have to a kid since our fish died: Commy-Pig!

10. Dream Vacation - I would love to go to a couple of my mission areas, Puerto Vallarta and San Blas, and see all the things that I didn't get a chance to see.

Aggie Football

Yesterday, Jessica and I went to Romney Stadium to watch the #22 ranked (AP poll) Utah Utes play the Utah State Aggies (who are ranked 6th on ESPN.com's bottom ten). It was pretty exciting for the first few minutes when Utah fumbled a punt and Utah State recovered and ended up scoring the first touchdown of the game. Well, that was the only one they got and the final score was 58-10 for Utah. MORE PHOTOS

There's a really good chance Utah and BYU will both be undefeated when they meet in November. If that's the case, it may be the most important Utah-BYU matchup EVER, with the winner probably ending up in one of the BCS bowls.

I joined an adult hockey league this week. The name of the team I'm on is the Ice Monkeys. Last night we played against Napoleon's Dynamite and won 7-5. It was a close game, it was tied 4-4 in the 3rd period. I was a little rusty but had 2 assists in the game. It was tons of fun. I'll keep you updated as the season progresses. I'm wearing jersey number 30 in the PHOTOS.

Yesterday Jessica and I went down to Salt Lake to meet up with some of my friends from high school(Nelson, Taylor, Jacob Coats, and Scott Nixon). We ate dinner at Cafe Rio in SLC with Senator Orrin Hatch. Well, not exactly with him, but he was eating dinner at the table next to us (he was sitting in the corner near the bathroom with his wife and another couple, so I sent a few people to the bathroom to confirm that it was actually him, and it definitely was).

After dinner we went to a Salt Lake Bees game. We got tickets for only $5, which included fireworks after the game, and a free huge strawberry limeade drink from Sonic after the game because the Bees had at least 7 strikeouts. Not a bad deal!

Barack Obama selected Joe Biden as his running mate today. I was kind of hoping he would choose Governor Tim Caine because then all the bumper stickers would say "Obama-Caine," which sounds like some kind of medicine. I can just imagine the SNL skits, "Can we get rid of your pesky underarm rash, YES WE CAN! Use ObamaCaine!"

As far as the republican ticket, I'm going to make a prediction: It's going to be Romney.

This weekend we went down to Fillmore to help my dad sheetrock their garage. Celeste and Spencer and Adam were also there to help. Friday night we went to the driving range and hit some golf balls, which was fun. I can't believe how good Jessica and Celeste are at golf!
